While traveling around the country, we come across a variety of meal ideas. It is nice being able to visit so many different farmers markets and roadside fruit stands along the way. Here are some of our meal ideas, from new favorites to good old fashioned stick to your ribs good.
The first breakfast on the menu is a new favorite of mine, Chas and the girls don’t really care for it though. Chorizo is a Mexican sausage made from some interesting portions of the critter (beef or pork) including lymph nodes and salivary glands. Yea, the sound isn’t too appealing, but I had some at a Mexican restaurant in Tucson, and fell in love. The chorizo and egg burrito has become a yummy start to my day, and making it myself makes it that much better.

The next breakfast is cheesy eggs with mushrooms, sweet red peppers, and black olives, a side of bacon, and some home made guacamole with chips. You might be sensing a slightly Mexican feel to our menu, I guess that happens to you when you spend time in the South West.

Next we have a lunch consisting of expertly grilled Avacado, Swiss, and Bacon Cheeseburgers. These burgers were grilled to perfection on our bumper attachment, then topped with a little bit of jalapeño catsup and barrel aged sun dried tomato balsamic vinegar. We also included some Home Made Black Bean and Cheese Quesadillas. These were made with black beans Chas prepared from dried beans, the whole process takes at over 24 hours.

Dinner consisted of Lydia slicing a beef round roast into cubes, browning it in a pot, adding some veggies and broth, and allowing to simmer for a minimum of 4 hours. This is my favorite veggie beef stew recipe, it is a hit with the whole family and feeds us for at least 2 meals.

We love to cook, so we are looking forward to our summer of campfire cooking in Oregon. Hopefully we will be able to blog about catching some Oregon salmon and smoking it over a campfire. We are also planning to pick a load of fresh berries and make jams and jellies. Now, go get a snack, I know this made you hungry….
